I’m intrigued.
The international culture diagram is a bit over simplified. Kombu is considered essential for unami in Japanese dishes. They didn’t include dried mushrooms. I guess their stress is to grab a general idea.
The list of unami rich food list is very helpful, interesting to know dried shiitake mushroom is much richer than for example, truffle.
