TURKISH - Spring 2024 (Apr-Jun) Cuisine of the Quarter

pistachios seems like a good bet if you like pistachios.

That would be the understatement of the century. One of the things my PIC and I connected on was our mutual love of pistachios. And our favorite ice cream flavor: pistachio.

What kind of person would not like pistachios? A crazy person.

I can’t understand how my daughter dislikes hazelnuts; she likes all other nuts.

I love hazelnuts, but they are a little bitter. Maybe that’s the issue for her.

Dude, I know people who hate walnuts. WTF?

That said, I loathe cashews. Chalky, soft, sweet excuses for a nut. They shouldn’t even qualify as a member of the nut famblee.

My very favorite is Pecans.

There aren’t many nuts I don’t love - well, aside from the stupid impostor, cashew.

Thems fightin’ words! I love cashews, pistachios, pecans, walnuts, almonds, macadamia nuts. Peanuts are probably the lowest on my list, although Brazil nuts are down there as well.

And in keeping with the Turkish thread, pine nuts from the Mediterranean or Turkey are the only ones I can eat.

Meet me at dawn. @small_h’s already set for her duel in the wee hours over beans

Turkish pistachios > California pistachios, but Sicilian pistachios rule them all.

Which I’ve not yet had.

if you can find Sicilian pistachio paste or cream anywhere, get it! My PIC uses it in his pistachio gelato, but it is also nice as a Nutella substitute if you’re a sweet breakfast person, and want to be really decadent.

Thanks @JenKalb - putting Safir on my list to try. (Gulluoglu is the one that flies it in from Istanbul.)

(I much prefer Turkish to middle eastern / Arab baklava — they’re pretty different imo.)

I have some pistachio cream from Amazon. Still haven’t opened it up.

Whatttt are you waiting for, woman! Hop on it!!

I wouldn’t say loath, and eat them when they are here (DIL stashes them), but I don’t prefer the tannins in the skin. Does anyone else notice that? Is that all varieties of walnut?

I think toasting and shaking off loose skin helps, but I prefer pecans for that reason.

PS. @linguafood , you are really challenging my notion of being able to recognize who is posting by their avatar!

I was looking for something easy to bake using it. Haven’t found anything yet to my liking, last I looked. Or easy enough for me to make.
