Is this like a Welsh onion cake?

I use cheddar in my Italianesque pasta dishes all the time! Any flavorful melty cheese is fine.

Usually casseroles in North America are soupier than an a Welsh Onion Cake. Served with a big serving spoon. They tend to be a one pan dish, and often are big enough to feed a big family.

The ingredients could be the same as

Welsh Onion Cake, probably with very different ratios.

Edit: one difference aesthetically, is that Welsh Onion Cakes are pretty. Casseroles stick to your ribs and fill you up, but they are rarely pretty!

Potato, carrot and ham casseroles are mostly a North American thing. Here is a recipe made by a Keralan home cook (North American recipe)

It’s kind of a made up recipe from youtube recipe. I peel and shred potatoes and carrots, slice some onions and its bound together with an egg mixture, topped with cheese.

have you ever made a quiche or tart crust from smashed potatoes? i’ve been wanting to try this.

we have ham and scalloped potatoes on the regular, and we don’t use anything richer than regular milk. it’s delicious.

Do you use cheddar?

No cheese at all. Potatoes, cubed ham, milk and butter. Tiny bit of flour.

I have made a scalloped potatoes with ham and Swiss, Emmenthal, or Gruyere. I have not made it without cheese yet. I will give it a try some time.

I don’t have leeks, but can substitute onions in for leeks. And yes, I’ve substituted brats for sausages.

That sounds like what I grew up with. I think there might have been cheese only on top.

I got up early to do my digital coupons for this week. I don’t know why, but apparently I earned a ā€œFREEā€ pack of green onions. I posted the free coupon and printed everything out. When I went through the self check out, sure enough I got a pack of green onion for free. YEA!!

I did have one woman staring at me as I was loading my haul into my bicycle cargo trailer. (I got a lot this morning, milk, potatoes, cabbage, etc.) I don’t know if she was angry at me, as she thought I was a ā€œtree huggerā€ or just curious. If she had asked me about it, I would have been glad to share, but she didn’t and I just went on my way.

One data point on inflation: The one item I buy consistently that never goes on sale is David’s sunflower seeds. For years (at least from 2023 through the beginning of 2025, it was $3.99/bag. In May 2025 it jumped to $4.49. Now this last week (February 2026) it jumped again to $4.79. That’s two price jumps in a year, for an increase of 20%.
