This is one of my favorite tricks as well - pretty amazing how much flavor a little levain can add!

My Italian Combo from ZaVino’s yesterday had yellow tomatoes! It was my first time there - I decided to pick up something to try the place out. Description: mortadella, capicola, salami, cotto prosciutto, provolone, lettuce, tomatoes, shaved onion, hots, Calabrian mayo, vinaigrette, hoagie roll.
So good. The yellow tomatoes were a pleasant surprise. So was the bread -wonderful.
Now I want to go pick up salumi for lunch!
That sounds like an excellent sammich, and it’s not overstuffed with 3+lbs of meats like so many hoagies in our state.
The blend was just right!

Made it today - only change was to increase quantity and hydration slightly (because I had levain discard at 70% hydration to use up).
LOVE IT. This is just the texture I was looking for - bite-able, tender crust, but plenty of chew and structure. Really nice toasted as well - the crust got crispy but not hard. I might back the hydration down from 70% to 68% next time, but keep the rest. Thank you SO MUCH for saving me endless rounds of experimentation!

We had BLTs again tonight because my brother and SIL
came over and when I asked him when was the last time he had a homemade BLT, he couldn’t answer.
Producing four of them with just a single two-slice toaster was … fun.
Had my first Black Krim BLT tonight! Fantastic, but I think I still prefer Cherokee Purple. However, this was the first tomato off my Black Krim plant, so it’s entirely possible the next one (or several) will be even better.
