This takes way too long for me. I love baked potatoes, but only when they’ve been cooked from scratch in the oven.

“She pours a cup of coffee, drips Carnation from the can” is a line in “Lies”, a magnificent, poignant song about married life by the great Canadian folksinger, Stan Rogers (b.1949-d.1983). (Another is the song, 45 Years). On Youtube and streaming services.

Try jumpstarting pricked potatoes via steaming or nuking to approximately half-cooked, then oven bake at 400°F. or hotter until the skin is quite crisp. The skin tastes as good as if baked the whole time, and the flesh tastes better.

I’ll have to try the sour cream next time. Interesting take.
