Recently, Spawn2 told me that the Costco frozen salmon burgers fit pretty well into street taco size tortillas if you cut the burgers in half, so last night I made up a quick slaw, grilled up two salmon patties, and warmed up some torts: four tacos in about 10 minutes. The dressing for the slaw probably took the most time to make!

Tonight fits the bill. In the country. We stopped at a favorite taco truck in Lodi for lunch and pigged out on enormous cabeza tacos (probably 2/3 cup meat between the two) and super vegetarian burrito. Stuffed. So scratching head for little dinner → minestra in brodo, aka chicken broth with tiny pasta, in this case, spaghetti broken into 1/2 inch pieces. Comfort food, not too filling, stupid easy,

I really like the Dr, Praeger frozen veggie patties … I buy from TJ, much lower price than Safeway and WF.

I heat them up in a tiny bit of oil, nonstick pan. Only takes a few minutes on each side.

I prefer to eat on a plate with a fork.

So what’s your favorite taco truck in Lodi?

Sheetpan meals have worked well for us this week, with both of us sick. The Sausage and Vegetables one at the end of this Freezer Meals blog post, in particular. I had just enough energy for the 10 minutes it took to peel and dice 3 potatoes, slice an onion and also slice a small ring-sausage from the freezer. I keep sliced bell peppers in the freezer and used most of the stash for this meal. Red grapes on the side.

I also had pork tenderloins in the freezer, bought on previous BOGO sale… our joke is we’re always eating the “free” one. One is thawing and will go on a sheetpan for supper tonight. If I have the energy I’ll peel and chunk some apples and an onion to go in the oven with that. Commercial mashed potatoes (also a BOGO buy, intended to top Shepherds Pie from that same Freezer Meals recipe blog) on the side.

Quick chicken soup - a frozen breast, a quart of stock/broth, a bag of frozen mixed vegetables, some Italian seasoning, simmer about 40 minutes, Add frozen tortellini to cook about 6 minutes when you take the breast out to shred or dice it, then stir the chicken back in.

I don’t remember the name, but there was one that used to park at the soccer complex just north of Stockton that was pretty good. Haven’t seen it since before the pandemic. I also liked one that parked regularly at Morada Market (east of 99 on the frontage road), but it hasn’t been there in a few months.

Where does La Morenita usually park? Yelp gives the location in front of a house on Lodi Avenue. (I assume “La Morentia” is a typo, but maybe not.)

La Morenita, yes. It parks in the tire repair lot at Lodi Avenue and Cherokee, southwest corner. Staff changes by scheduling but is always pleasant and accommodating,

Well I’m old, tired, and feeling like crap, but with NO appetite - still it’s essential I eat, due to insulin usage.
Tried some yogurt but it wasn’t happening, couldn’t eat it. I did resort to drinking Campbell’s Cream of Mushroom Soup out of a mug, and success! I don’t know what it is about hot and salty liquids that are so satisfying while sick. (Went to Doc on Friday for a “well” visit, where I got my extra strength flu shot in one arm, and the pneumonia vaccine in the other. Damn relieved the Covid Booster and RSV vaccine weren’t available to me! Maybe I need a cocktail? A Corpse Reviver sounds promising. JK :stuck_out_tongue:

I almost always have chicken taco meat. Throw tortilla on flame, remove, fill with chicken add pepper sauce (homemade) and pico de gallo. Leftover rice and beans and I’ll sleep well.

All your talk of pico de gallo made me want some. WF had it on sale the other day but had run out by noon so I decided to make some.

Got tomatoes at Costco, went nextdoor to TJ, they were out of cilantro. Had to make a 3rd stop for the cilantro, had already bought white onion and chiles elsewhere.

I’m using a recipe from Kenji, Serious Eats. He salts and drains the tomato pieces. His recipe has no garlic, do you put garlic?

Not me, but the dotter can’t live without it in any red sauce or salsas.

The vaxes really wipe me out for a few days each time I get a new one or a booster. I’m all done, I hope! Ooooops, I forgot about the RSV! Keep up the good work!

Thanks! Yeah, I felt pretty bad with the (2) I got for 2 days, but still have to get the RSV, Covid, and tetanus. I think it was the Senior flu shot that did me in because it has 4X the active stuff as the regular. First time I’d had one that potent.

RSV made me very very sleepy, but that was it.

My second shingle shot 2 weeks ago knocked me out for a weekend.
I’d recommend some ramen packs in the pantry if salty hot soup is appetizing. You can always
add a few extra ingredients but I find those noodles very comforting. We like Mike’s Might Good,
available at Whole Foods and our local grocers.
