I’m a cashew-man myself, but I’ll admit pistachios have their place. I don’t know if anybody upthread has mentioned this outfit (after a cursory glance), but I recommend these guys:

ETA: I’ve had the usual suspects – Sicilian, Turkish, and the like. The problem with these in the US is the freshness/staleness. The Santa Barbara outfit side steps that. And, apart from their nuts, their current pistachio brittle is superb.

I recently tried Turkish, Persian, Sicilian and California pistachios side-by-side at Kalustyan’s in NYC and was blown away by the difference. The California ones were far inferior- less flavor, less complex-tasting.

Ahhhh, my late brother LOVED their pistachios! I remember buying him the Chili-Lemon and Hickory Smoke in-shell pistachios.

Sourcing is crucial in these tastings and how long those particular pistachios have been on the shelf.

Thanks for the info. I’ve only had the California ones so far; have yet to try the Middle-Eastern store recommended by @pavlova. I hope to find the good stuff there.

I need to go too! All this talk of pistachios has me craving them. My teaching partner is going to Sicily this summer and I have already put in an order for pistachios.

Oooh, lucky teaching partner! Where in Sicily? There’s a bunch of threads already, and I’d started one for my current trip.

I’m not sure! End of school year is a crazy time and we are like 2 ships in the night, meeting just to hand our students over. Will ask her. 14 more school days!

So the Tarallini - are they like a baked dough with pistachio-confectioners sugar coating?

We didn’t buy any of these, but a jar of pistachio pesto to attempt a recreation of that amazing sammich we had in Ortigia :heart_eyes:

Ironically, I did not take a pic of the pesto :smile:

Afternoon coffee treat was from another Italian bakery on our way home from the Italian market: a mini sfogliatella with pistachio cream :heart_eyes:

The world is really going pistachio crazy! From a local bakery that actually opens early, at 7 am, I had a fresh pistachio chocolatine, which had vanilla buttercream and pistachios in the middle, in addition to the usual chocolate batons. The top was decorated with chocolate and a liberal amount of chopped pistachios.

It was nice and fresh and tasty, but not spectacular.

I made a batch of pistachio paste and we’ve been dipping chocolate sticks into it, then rolling them in feuilletine. Our cheater version of the Dubai trend has been pretty tasty.
