Not a clue. That said, one can be a good writer without having a degree.

I roasted a turkey upside-down inadvertently a few years ago (I’m a pescatarian who has been charged with cooking the turkey several years). I discovered the “error” (I found out later that it’s a published technique), guests helped me flipped it over, and it turned out just fine. Makes for a funny story to this day.
I think we’re going to brother’s in Westchester County NY this year. He and my SIL are both good cooks. I’ll be a happy sous chef.

I’ve still got a bunch of stockpiled puff pastry to use up, but now I’m thinking about a simplified stuffing (also bec I just made and ate a pile of kheema).
Anyone have similar things they make?
Some ideas I’m toying with:
– Pimento cheese
– Harissa + cheddar
– Bombay sandwich / samosa-ish (mashed potato, green chutney / zhoug, cheddar)
I could also see cheesy + sweet + spicy being good – cheddar (or brie if I can figure it out) and hot pepper jelly or spicy marmalade for eg. Kinda like baked brie in puff pastry, but rolled up & sliced.
Everyone who tried this last year loved it. I used various herbs and cheese. Dill, parsley, cilantro, probably garlic.
A few years ago, I made puff pastry spirals filled with the onion jam from this recipe (just the jam, without the breadcrumbs or sour cream), and they were seriously good, especially warm, and a huge hit with party guests.
Savory rugelach might be a whole separate rabbit hole - yum!
After a few cooking misfires, I’m contemplating jettisoning all of my plans in favor of making Sohla’s Fried Chicken Thanksgiving…
Fried chicken is definitely a festivus food at our house. It’s on the list for the December holidays.
