I find the visual aid useful for spatchcocking
The first time I tried to cut out the backbone, I used what were supposed to be heavy-duty scissors. They flew apart, luckily not in my direction. I really should get some poultry shears. Be careful out there!
I once made a spatchcocked turkey, but got the butcher to cut out the backbone. The recipe was a very labor-intensive Jacques & Julia recipe. I was looking forward to the end result, but a difficult āguestā screwed it up, and in disgust I just gave up. The darn thing was served cold.
This is a lesson I also learned⦠Iām done with guests coming over for Thanksgiving. No matter how hard you try, someone has to give a negative critique about some aspect of the meal.
You can do 99 things out of 100 correct and that āindividualā will go on and on about the 1 thing that wasnāt quite right.
Sunshine and I were in a similar situation last year, there was an acquaintance of hers that was going to be alone on Thanksgiving. I told Sunshine that the woman is difficult and there is a reason she is alone. I was not going to have her come to our Thanksgiving and ruin it.

Where are the yukon gold potatoes? Iām in the Greater Boston area, and finally hit up Stop & Shop for my Thanksgiving shopping. They at least finally have a stocked produce section given local inventory issues due to a cybersecurity incident recently. They have russets, they have red bliss, and giant bags of white potatoes (I wonāt use up the 5-10 lb bags). They had one of those tiny bags of the nugget sized baby gold potatoes, but no normal sized ones. They also didnāt have them in the bigger downtown Trader Joes in Boston (they also had red, russets and whites). Ran to Target for something else - and admittedly they only have a tiny produce section - but they only had reds. Is it just my city, or is there some weird Yukon Gold potato (or any yellow potato) shortage Iām not aware of?
I shouldnāt be spending $ but I think I NEED, not just WANT those shears. My regular kitchen shears are not up for the job I have in mind. (They arrive tomorrow!)
Iām going to roast a small Butterball Tuesday, trying Woks of Life method of first hour breast side down on a bed of onions, celery, carrots.
I want to use those shears to cut the roasted turkey in half to deliver (surprise!!) to two different friends who arenāt planning to cook turkey. Iām going to try to make Milk Bread too, great for turkey sandwiches.
(Iāll cook mine on Thursday, of course. Also making my usual Bourbon orange zest cranberry sauce.)
