Sweet pepper "juice"

I landed a great deal for sweet yellow and red peppers. So I’ve cooked down almost 3 kilos in my solar oven with just salt. I’m planning on preserving them in various ways (canned, piperade, romesco etc…) So the question is They have given off alot of JUICE… What do do with this delightful pepper water ? Any ideas?

Interesting, I would have thought it would evaporate in the oven.

Should be good in any soup or stew, I would imagine. Or in a salad dressing.

The solar oven is more “humid” than the oven. And I cooked them covered. Salad dressing, good idea !

could add it to a vegetable soup.

If you’re cooking rice or another grain, you can also use it in place of water to add some flavor.

Liquid gold! All the suggestions above. I would add the juice would be terrific in any fish or meat dish where the flavor of sweet peppers would be welcome. Examples: With roast chicken, both during roasting and at the table, and in baked fish with tomato sauce.

Now I’m thinking the sweet pepper juice would also be a lovely addition to any tomato sauce you happen to be making. I keep a jar of commercial pepper paste in the fridge for this reason. Your pepper juice would serve even better, I think.

Add to gazpacho or salsa. Use instead of water in cornbread. I wish I had some!
