Spicy Korean Chicken of BBQ Rub Recipe

Ingredients:
2 tsp oil,
1 1/2 tbsp a Korean chilli paste,
1 teaspoon of gochujang, or normal chilli powder, or Korean red chilli powder
1 tablespoon of sesame oil
2 tsp soy sauce
1 1/2 tablespoons of sugar
1 piece of peeled and minced ginger (about 1 inch or 2 cm)
3 minced garlic cloves
salt according to taste

Instructions:

  • To get thinner pieces of flesh, cut the chicken thighs horizontally. Depending on its thickness, cut each chicken thigh into two or three horizontal slices. Put aside.
  • In a bowl, combine all the marinade ingredients; whisk to fully dissolve the Korean chilli paste, or gochujang. The chicken should be marinated for at least 30 minutes, but ideally two hours.
  • The chicken should be cooked thoroughly and have a faint sear on the grill. The chicken can also be baked in the oven for roughly 20 minutes at 400°F (207°C) or pan-fried. Accompany right away with steaming rice.

Welcome Henryc.

Thanks for the the Recipe.
I would make a few changes:
Add Asian Pear, bit of Onion
Sub in Corn, Rice or Malt Syrup for the Sugar
Blend everything in the Blender

Isn’t Gochujang, Korean Chili Paste and Korean Chili Powder/ Flake is Gochugaru ?
