Speaking of deviled eggs

Do you know France has the Association to Safeguard the Oeuf Mayonnaise

I learned a lot reading this article https://www.theguardian.com/food/2019/jul/16/the-rise-and-fall-of-french-cuisine

I have no reason to doubt. But Oeuf Mayonnaise in any Paris or perhaps any restaurant in France can bring you a huge range of plates. As opposed to our (American) deviled eggs, classic oeuf mayonnaise is a simple hard boiled egg in, on or mounted with mayonnaise. it’s quality depends, obviously, on the quality of the egg or the mayo. There may or may not be garnishes, lettuce, tomato, herbs, whatever. It can cost from a euro up to 5€, At best, its a cheap and respectable order.

I’ve been looking for ways to accompany hard boiled eggs for this year’s retreat! Could this be it?

BTW, Instant pot " boiled eggs" for the win!

Thank you for linking this article, it was very interesting.

If I had known about them in all of my visits to Paris they would have been a go to! I only have learned about them since we were last there!
