Wolfgang Puck’s take on Chinese style…

Rub slabs with pepper and marinate overnight in soy sauce & rice vinegar, minced shallot garlic jalapeno, and chopped ginger lemongrass (or cilantro).

Bake 'em ahead of time at 325°F for 40-45 minutes and remove. Before serving nicely brown/heat through using grill/broiler/cast iron.
