I use Alton Brown’s recipe which uses super caramelized onions, apple cider, chicken broth, fresh thyme, and white wine. I top with toasted baguette slice and shredded gruyere or Swiss.

All this and a shot of brandy somewhere in there (two shots, if you inlude one for the cook).

What else ya gonna do with a Madeleine plaque? Madeleines are such a delight!

I read somewhere that it can be used to make financiers. I must try that sometime. And yes, Madeleines are such a delight. I find that they go stale pretty damn quick.
