I have 2 stove top PC’s. One is a large All American for canning. The other is an odd smallish PC which can be used for canning too. My Extension Service agent had never seen one that small which could also be used for canning and was intrigued. I originally bought the small PC when I lived fulltime in an old Airstream. I liked that it saved fuel (key when you have to lug a propane tank to town) and didn’t heat up the small space like the oven would. And the pot alone doubled as my one large pot. I still like it if I have a small amount to can.
I’ll keep all three. For every day cooking I find the electric easier since you don’t have to monitor the heat, count down the venting and get the regulator rhythm just so.
