I love to make merguez patties when I can get ground lamb. They freeze very well.

I didn’t know that! Thanks. Interesting that their “regular” sausages are no longer on their website. Maybe they don’t ship them anymore. I can get them at several places here in the rogue valley.

I can’t figure out the exact relationship. I know the owner in Oakland use to travel to Oregon and send some guys up there but I think they might have sold or separated somehow. In any case, decent sausages and they go easy on the salt and sodium.

I mentioned them many times before: not only are they widely available, but Trader Joe’s Italian sausages — both mild and hot — are also really flavorful & abundant with fennel seeds (which I love) for a supermarket. And the hot ones are very hot.

The Käsekrainer in Austria are delicious.
I also love a Spicy Northern Thai/Laotian Sausage with wrapped with a bit of Lettuce, Peanuts, Ginger Shreds and Herbs

Very interesting sausages you’ve found! I’d never really thought of things like ginger or lemongrass in sausage. Am thinking of making my own sausage soon.

In Indiana (although I’m presently slow-relocating to WA), there are terrific sausages at some Amish shops. I do agree about not being excited about mass-production sausages. Like pizza, it’s seldom exactly bad, but also seldom exquisite.

The Lao sausages truly were a revelation. I’ve never in my life been that excited about a meal with sausages being the main attraction. You should try @ricepad’s recipe if yer already planning on getting into sausage making :slight_smile:

I recently bought andouille at my local country butcher for inclusion in a gumbo recipe. I’d never made it before and immediately fell in love with the andouille. So flavorful.

My favorite griller; hot hungarians. Similar to hot italian, but some paprika, including hot paprika. LOVE these.

I need to add that this is sold in a grocery store local to parts of Texas. The name of the store is HEB. A great store.

I think someone else here mentioned HEB and their proclaimed love for it before. It does sound like a great store — especially if they’re selling sausages like that!
