Bib lettuce salad with spicy shrimp, feta, tomatoes homemade pretzel bread croutons and various pickled vegetables.
An adaptation of Vikalinka’s red cabbage, kale and
pomegranate salad. I omitted the mustard,
and subbed concentrated sour cherry juice for pomegranate molasses.
Tonight’s salad was l.o. slaw. Still crispy.
Of course I did. I eat salad almost every day
This was particularly delish. Love the addition of sautéed shrooms on top

I had a wedge salad at work for lunch. I was inspired by the most recent issue of Cook’s Illustrated. I had to cover a class during my lunch so I wound up eating it during one of my classes while the students were taking a test.

Wedge salad with bacon crumbles, halved cherry tomatoes, red onion and Russian or a slightly spicy Thousand Island dressing. (I don’t like Blue Cheese dressing)
Both my PIC and I love it in sandwiches for that fresh, krispy kronch. I often shred/julienne instead of big ole leaves.
I also love it stir-fried with oyster sauce.
Prepped layered salads in mason jars for this week’s lunches.
From bottom to top:
–Olive Garden salad dressing (don’t judge)
–red bell pepper
–radishes
–mini cucumbers
–baby carrots
–tomatoes
–brown rice cooked in veggie scrap stock
–hardboiled eggs
–blue cheese crumbles
–romaine lettuce
Pretty tasty.
