Roman style Artichoke recipe

I got some beautiful artichokes at Trader Joe’s … I usually roast them or stuff then roast but this time I decided to try a new recipe:

I bought a little pot of fresh mint at TJ for only $2.50 but didn’t want to also buy fresh oregano and parsley … I added a little dried oregano and chopped fresh basil to the mint/garlic/olive oil mixture.

It’s a good thing no one was paying me by the hour to make this because it took forever, was very difficult to scrape out the choke from a raw artichoke. (Whatever happened to my grapefruit spoons? Would have been useful here.)

I cooked them in my Le Creuset … I tried one but I don’t really think it’s worth all that work.
