Works great with any vegetable as a base.
I often make risotto with cantherelles mushrooms using home made chicken stock.
Here in Sardinia they have Sardinian saffron risotto (Risotto Sardo allo zafferano). The island is a producer of saffron, which has protection status) and this lovely ingredient is used in a few things.
The risotto is topped with sauteed wild mushrooms.
