For the third year in a row, I’ll be whipping up a special event at my mother’s church. Last year there were 30 attendees; I expect about the same turnout this year.
Want to switch up the soup offering (I did the same carrot-ginger soup two years in a row.)
For desserts, I’d like to experiment with a lemon tiramisu and an Italian-style jam tart.
For sandwiches, last year I did chicken salad and turkey/swiss. This is the least interesting part of the menu, but I need to find something interesting to do here.
I made the same scone recipe both years; I should really change it up.
Follow along to watch me bake cakes in the middle of the night and make an inevitable series of bad last-minute decisions!
I’ve been wanting to work on an asparagus soup for this event since last year. The soup has to be held at serving temp for a while - at least an hour - and I wonder if asparagus will smell unpleasant if held like this. Only one way to find out, I guess.

For the soup - what about a Greek Avgolemono Soup? Although if you’re going to use lemon in a dessert, maybe not.
My next thought was a chicken corn chowder (and if you make corn stock, it’s extra-extra corny!) (I thought I had posted the recipe I’ve used for years for chicken corn chowder with roasted red peppers, but I can’t find it. LMK if you’re interested.)
Other thoughts - a potato & leek soup or a creamy mushroom soup.
I’ve been thinking about the sandwiches. Any opportunity to maybe switch up the bread? Herb bread, tomato bread, or something similarly exotic? Are open-faced sandwiches ruled out?
I’m just thinking of the types of savory sandwiches we’ve enjoyed at the high teas in the fancy hotels.
I’d like to keep the soup vegetable-only for cost reasons, and I’d also like it to be “spring” feeling. I’ve talked myself out of potato-leek numerous times because it doesn’t feel “spring” to me.
I love cream of mushroom soup and make it from CSA mushrooms every year, but Mom won’t eat mushrooms… I think they are a little too divisive for an event like this.
i think i looked at that soup recipe last year and wanted to try it, but never got around to it. it’s the vibrant green color that’s very attractive! thanks for linking it.
as for the Japanese fruit sandwiches - haha, yeah, not a thing I could reasonably serve, I’m afraid. you’re also right that strawbs won’t be in season yet. it’s my sorrow every year that this event is just a few weeks too early for my favorite fruit!
that pea soup is interesting (surprised by the lettuce!) i’ve been eating a lot of peas lately because they are fiber powerhouses … i will try this soup. thank you!
i might be imagining this, but i think i did a trial with tortillas last year or the year before, and found they also dried out? in any case - i’ll experiment with this, thank you.
