Day 2 report on the KA millionaire’s shortbread:
I was curious how these would slice after being in the fridge overnight. I warmed my knife with warm water and wiped it between all cuts, and was able to get neat slices. Straight out of the fridge, the chocolate and caramel were both soft but not gooey, which is perfect for my use case. I can make these the day before the tea, refrigerate overnight, cut them in the morning, and keep in the fridge til service.
Also they are delicious.

Five prep days to go.
Tonight I scaled out my scone dough. I’ll mix and shape tomorrow, then freeze unbaked.
Do you have a countdown plan you feel like sharing with us? It’s perfectly ok if you’d rather not. I just love the building anticipation part.

Here’s the plan for the days leading up to Sunday’s tea.
Today (Tuesday): Scale scone dough (4 batches, dry ingredients only.)
Wednesday: Mix scone dough, shape, freeze unbaked.
Thursday: Scale bundt cakes, millionaire shortbread, and oatmeal jam bars.
Friday: Bake bundt cakes (triple lemon velvet bundt, churro bundt.)
Pull soup.
Big shop.
Saturday: Make millionaire’s shortbread.
Cook chicken. Prep and portion chicken salad ingredients.
Buy flowers.
Sunday: Bake oatmeal jam bars (they get soggy if they sit overnight.)
Bake all scones.
Mix chicken salad ingredients.
Sunday at venue:
Warm soup
Make sandwiches (chicken salad, plus turkey+Swiss.)
Slice millionaire bars
Stage everything

I like the British version a lot.
Here in Ontario, they’re quite popular with British expats and the children of expats. Popular on cookie trays at Xmas.

Alright, 48 scones shaped, cut and frozen. I’m going to bake one of the ones I froze earlier today as a test bake right now.
