What I was thinking was, cooking the kugel first in a covered casserole would allow it to cook through. Then cooking uncovered, after it’s, say, 2/3 done, would crisp the top, obviating the need to flip it. Or if one were to choose to flip it, there would, I think, be no danger of it falling apart. I’ll have to try it once.
