Thank you for being a great parent in a tough situation! My CASA kiddo is the pickiest eater I have known, but he is anxious about several things. It takes time to understand trauma.

I was a CASA for 12 years before meeting the boy I was very lucky to be able to adopt.

That was my rule and my parent’s. We’ll just wrap it until you ARE hungry. You’re next meal awaits in the fridge.

I deal with a girl from a similar situation you describe in your son’t case. She can not be in the same space with broccoli. Sounds funny, but it isn’t. Her anxiety goes off the charts, like “blood pressure proof” off the charts. Still, she’s been with us since she was first adopted and is doing great. A few surprises along the way, but she will turn into a contented adult in the end…sans broccoli. Very few details regarding her former life; but who needs the deets? You start where she starts and see her through.

People are fast to judge. Might piss us off; but those folks have to carry their ignorance 24/7/365. Your son and my student will not.
