My son was coming home for a few days and I asked him if he’d like me to bake something. He said, “How about a pie?” Pie it was. I made the crust from The Book on Pie and I winged the filling by just using sliced peaches, some brown sugar, a pinch of salt, and some of King Arthur Baking’s Pie enhancer, which is just superfine sugar, clear gel, and citric acid. It came out perfectly and the peaches really shone on their own.
