Hi, Claus:
I think a difference in alloys isn’t the answer. It may be a difference in surface treatment with your Dartos.

Certainly sounds like your problem is isolated to your Darto pans. I’ve owned 4 different De Buyer CS pans. And none of them ever had problems with Rust.
I simply used them. Washed them in hot water without soap, and hand dried them thoroughly.
Today I only have one left. But that sad in a kitchen drawer for over a year without being used. And still no rust.
Hey Soren,
It may be the surface treatment on the Darto’s that cause the minor rust issue as Kaleo stated.
But I’m just glad I now only own pans, that I can clean and soak in detergent without having to worry over rust issues and seasoning smoke in my kitchen.
I can’t see myself owning raw iron pans ever again.
To me - with my OCD problems in mind - pans which I can’t wash in detergent thoroughly will never be my thing. They weren’t my thing to start with, I just hoped I could learn to cope with them. I couldn’t.
Day in and day out I just use stainless. It gives me the best chance of tasting the food I’m cooking at that moment, rather than with a tinge of something I cooked last week.
