CHAR SIU PORK / CHINESE BBQ SPARE RIBS
I found some pre-cut meaty ribs at the store that I couldn’t resist. I’ve made their char siu recipe several times, and the bbq spare ribs recipe is very similar.
I’ve used honey instead of maltose for the glaze before, but I bought a jar of char siu sauce that includes maltose a while back, so I used that and let it go another 5 mins to caramelize.
This was delicious, and I really liked how the separated ribs caramelize all over.
