Moving to Red Hook (not Brookyn), NY

So after living in Seattle for many years my wife and I will be moving back to NY state. In our trips to prepare for the move we’ve eaten in variety of restaurants, but now am looking for a deeper dive in the Dutchess County area. We’ve been to two of the CIA student restaurants, a few in Rhinebeck (just the basics, nothing high end), and the local spots in Red Hook. Any suggestions for where to get a good meal in the area would be gratefully appreciated. Thanks.
