Minchet Abish is another Ethiopian Dish made with Ground Meat
and of course Kitfo is probably the most famous Ground Meat Dish.

Have not come across this at a restaurant, but will try it at home – thank you!

(Always thought of kitfo as tartare and therefore freshly chopped / minced rather than “ground”.)

Ground/Minced are pretty much the same thing really.
Some may say Ground means that it is not done by Hand.
All the Ethiopian Restaurants/Homes that I have experienced Kitfo is done with a Machine rather than a Knife.

Neither of these recipes that are linked is a bolognese, but they are both meat sauces. I’ve made variations on both (haven’t made the meatballs or added burrata, just made the sauce.)

Also, you can’t go wrong with a bit of Italian sausage taken out of the skins, some onion, white wine to deglaze the pan, a couple of tomatoes, a pinch of oregano, and some heavy cream.

They are pretty much the same but only Buttnmandl wear the carved wooden Masks like the Kramperl.
A couple of the Locals in Berchtesgaden were lamenting the appearance of the Krampus as foreign to what is Traditional there (like a 5mile Radis).

Do you know anything about the history? Does it have pagan origins? Just curious.

The origins as far I understand them are Pagan and ancient.
They were Christianized by having the powerful Saint Nikolas contain and bend them to his will.
Once that was done the were used as the Muscle to threaten children so they would be good.
Having that lot all enter your little house in country would(and still does) scare the Crap out of most Children!

As does adding a bit of miso.

I’ve found that layering things in helps immensely. Works for chilli too. … as long as it tastes good, no one has to know.

I’ve become much more careful with this as more and more people have wide-ranging allergies / food sensitivities or inflammatory responses, and would never have dreamt I’d put fish sauce or miso or whatever else into an italian sauce.
