Also a split banana with a dollop of mayonnaise and a sprinkling of chopped peanuts is a nice salad-ish side.

The coating is the pretty much the same as what goes on Southern Tomato Pie. I’ve put it on top of zucchini, too.

I’ve also used gruyere, Monterey Jack, or Swiss, or a mixture, when I haven’t had mozzarella or cheddar on hand.

An aside on cucumber sandwiches: I have had them many ways and enjoyed them all. An awful lot of people pair their cukes with cream cheese. Not many seem to peel the cukes. My absolute favorite is a firm white, similar to Pepperidge Farms, better still home made. Leave the crusts on the bread. The bread is spread thickly with Duke’s. The cucumbers are peeled and sliced thin. They are piled about three layers thick and topped with a liberal sprinkling of Kosher salt and several turns of ground black pepper. If you really want to get specific, Diamond Crystal and Telicherry.

I have been extremely annoyed with my last several loaves of Pepperidge Farms sandwich white, which is my preferred go-to. The crusts have been separated off the bread. It’s been more than one loaf, so I know it’s not mishandling.

Hard to find any firm white sandwich bread …

I noticed the same with PF. I just throw together a quick white loaf with a small bit of honey in it.

I’d be freezing too much bread. Going to look for an alternative.

I usually divide a four cup loaf into two small loaves in smaller pans and freeze one. It does not seem to suffer noticeably.

Write the company, send them photos of the problem and the wrapper and maybe they’ll send you a few coupons for your troubles. I have been doing this with too many products lately; I think processed food has taken a big dive in the past few years.

Wow- takes me back. There was a hair product in the late '60s and early '70s called PPT- it was distributed by Jheri Redding, a professional brand. It looked and kinda smelled like soy sauce, and it clamped down the cuticle on your hair like mad. It was one of the early hair fixers. I wonder just how closely related that was to soy sauce. Redding changed to Redken, which is now a Loreal brand. There were probably sales in between. I’m wondering. May need to look it up on reddit or something.
