A Meaty Gumbo Z’Herbes. It’s Maundy Thu today. Use an odd number of greens.

I’ll make an adaptation of this tonight, with what I’ve got, and less cured meats.

I combined the Czech and Austrian tradition of eating creamed spinach with potatoes and eggs, and the German, Austrian, and Swiss tradition of many spring greens eaten together (usually in a soup ) for my Green Thu dinner.

špenátová omáčka is the Czech name for the creamed spinach.

Cremespinat in Austria, Rahmspinat in Germany.

Chard, escarole, green onion, shallot, basil, parsley, dill, and garlic were cooked in butter. I added 2 pinches of nutmeg and white pepper. Cooked until quite soft, then a milk and flour mixture was added, and cooked some more. Served with parsley potatoes and a fried egg, or hard boiled eggs.
