My cousins call it “peut rôtir” and that looks gorgeous! [Is this elegant enough?] What cut of meat gave you that much browning? Salt? Pepper? I see some carrots. Onions? Garlic? I was just about to suggest something similar. My neighborhood dive in college was called “The Dugout” given its proximity to Fenway Park, but to those in the know it was “Le Du Gout” with proper French pronunciation, bien sur!
