La Cuisine by Francoise Bernard

Stumbled across this book in the bargain bin for $15, sealed in plastic, but I figured I couldn’t go wrong at that price upon reading the jacket blurbs from Pierre Gagnaire, Dorie Greenspan, Eric Ripert, and Jean-Georges Vongerichten. It’s subtitled “Everyday French Home Cooking, 1,000 Simple Recipes” and was originally published in French as Cuisine 1000 Recettes in 2008. I just started reading the book and have finished only the first chapter on soups, so it is too soon to tell if I will cook from it.

The book is huge - 806 pages including the index! Francoise Bernard was not familiar to me but she has been giving advice to French home cooks since the late 40’s/early 50’s in a sixty-year career that includes authoring more than 20 cookbooks, and cooking live on a TV show that had more than 300 episodes.
