Visiting extended family for some time, and as they like my cooking, I am shuttling a lot–a week here, a week there. Knives are a special challenge as to safekeeping their edges (family gear is unpredictable, at best, but I love the people).
I offer a link below on Amazon . Anyone have any further thoughts–better, alternative? Here’s what I found so far:
Assuming you’re trying to link to a knife bag/roll, I have a couple ideas. If you’re flying and would prefer not to check bags, consider taking a whetstone with you so you can sharpen the knives of your host family members. A few strokes on a medium-coarse stone can work wonders on even the crappiest of knives. If Aunt Jane only uses a worn serrated knife and a steak knife for all her cutting and slicing, go to the nearest restaurant supply store and buy a Dexter 8" chef’s (or an equivalent). It won’t cost much, and you can leave it with Aunt Jane as a gift. While you’re at the supply store, think about whether you’ll be there long enough to buy a steel, too.
I gave my son in law the Hardmill compact waxed canvas knife roll. It holds four knives and will accommodate long ones, like the 14" slicer he uses on smoked brisket.
Looks like a great roll. Holds more than I have in my knife block. I really like the idea of putting a stone in there. A 500 or a 500/1000 will put a “kitchen” edge (a little tooth, not a high polish) on a blade very quickly.
I have a Messermeister that’s been a trooper. Here’s my advice, since this could get banged around by others:
The cheap edge protector sleeves are a good idea.
So are half corks for tips.
Get a bigger roll than you need, cuz extra pockets are good for turners, tongs, thermometers etc. AND you learn to roll the stuff (skipping slots) so everything fits together better and is better-cushioned internally.
I bought one of the Hardmill waxed canvas rolls. Pretty bougie, but well built. I need to purchase some generic edge protector sleeves, even if I am careful with the edges, a great kitchen knife can get banged up. I keep a separate group of traveling knives in it. On fishing trips and get togethers, I somehow am always the cook… Half corks are a great idea Kaleo, I will have to collect some.
If I have to bring knives somewhere, I use blade guards and then wrap them (usually 3 or 4)in a heavy canvas tote and put a thick rubber band around it. I thought about getting a dedicated bag or wrap but this happens maybe once a year, more like every two years….then I’d have to find a place to store it, and remember where I put it when I need it. For camping/emergency I keep a couple sharp but inexpensive knives in a kit.
Yes, it is pretty bougie, but that was the one he was eyeing, and I got it for him at Christmas. He travels with his knives a good bit, this being central Texas and him being a man highly regarded for his barbecue. I also gave him, longer ago, a very cool new vintage 14" slicer I found at Bernal. It is carbon steel and very thin and flexible. Bernal’s website is dangerous!
