Now that I think about it, it may well be 10 years since I last purchased Trader Joe’s multigrain baking mix. Apparently it has since crossed the rainbow bridge. I liked it for muffins, cookies, and pancakes. IIRC, it had several flours plus salt, baking powder, and baking soda. Does any one know of a supermarket cook-a-like? I know I could concoct something similar but haven’t cooked much in years, now have little pantry space, and would prefer not to keep a 5# bag of rice on hand…
Consider Bob’s Red Mill multigrain (10 Grain, 7 grain) baking mix or hot cereal. I use the 7 Grain hot cereal to make no-knead bread. But it looks like the pancake mix has the added baking powder, baking soda and salt that you mentioned you want. Also has powdered buttermilk in it.
