I was buying it a lot during a phase where I was making elote everything and now it’s nowhere to be found for at least 6 weeks. Whole Foods said they won’t be getting it again.

We don’t have a WF out here in the sticks, but we have a sizeable Mexican culture here in Southern Oregon so lots of cheese.
Its everywhere here even Grocery Outlet! (SF Peninsula)

Do you have Safeway, if I can’t find it anywhere else, they always have it. Or Walmart.

My local Safeway has two different brands. If you don’t have a Safeway maybe check Albertsons/Vons.
All the Mexican Markets have it in the SF Area and many other Markets as well
