This is like using "miracle browning powder’ on a SV steak with no actual Maillard or caramelization. Make it look like something it"s not…
It was not about presentation at all. This decidedly was not a presentation situation – or a group of diners concerned at all about presentation. The brownish color was the spicing – the actual spice mix applied for flavor - and in the steamed/poached situation, you need to do a lot to get flavor from a chicken breast – which he managed to do.
