Hooray for old things!

This morning we got in the Mardi Gras spirit with pecan waffles with butter and maple syrup. We made them in a 1953 Landers Frary waffle iron with aluminum plates which we greased lightly with bacon fat. The excellence of these waffles, including crisp exteriors, was noticeable. You simply cannot achieve equivalent waffles with nonstick waffle makers. So in addition to health and ecology reasons (no manufacturing, ingestion, or landfill disposition of microplastics), buy old just because it works so incredibly well. Fat Tuesday is nearly here!
