Today, I decanted my red wine vinegar and was very surprised at how large the mother had. become, so I decided to start some fresh batches. The old vinegar was made of whatever wine was left over but the new batches are going to be specific: red, white, and maple. We have a lot of maple sap from tapping the trees, so this is the perfect time to try something new. We’ll see how it turns out. I added a bit of maple syrup and a couple of shots of dark rum to the mix for interest. I’ll update in few weeks.

Good for you. I have always been intimidated by both the mother, and by making my own vinegar.
Very impressive! I only have a Wegmans red wine vinegar with the mother, which I always shake up bigly before using. I hope that doesn’t hurt/kill the mother?
Yes; do keep us posted! I’m working on some pineapple vinegar! I keep Braggs ACV and always have some “mother” for experimenting.
