DH’s holiday special: pickled herring. This year he used 50/50 white and cider vinegars, and declared it his best batch yet. I don’t partake, so I couldn’t tell you. :laughing:

It’ll be ready to eat in no less than a week (but longer is better, I am told).

Actually, I’ve tried it (not his, but other), and just didn’t care for it.

I guess you have to have grown up with it. I love salami, now avoid it but I could see where someone could be turned off by the bits of fat.

I can only eat sardines if I’m famished, with lots of good mustard.

This is more my style: today’s batch of marinated mushrooms.

Have you tried sour cream herring? I like that. But I also don’t mind most pickled herring and I like rollmops.

I’ve been to a couple Swedish restaurants that will have 8 or more types of marinated or smoked herring.

I’m putting these on my list. My mom and I are both trying to less carb lately so the plan is we will each bake a few favorites and a new recipe and split the bounty

I’m going to ask my nephew if he’d like to bake them in addition to the usual gingerbread men (no egg and jaggery in place of the sugar in those so my mom can enjoy them too).

I was thinking that the colors could be anything, and more than 3 too.

My first batch of Pink Ladies/ Pink Angels / Pink Sin.

I was looking at 4 different recipes, with various proportions.
I ended up using the base of 1 cup graham crumbs: 1/2 cup butter from this recipe:

Most recipes called for 1.5 cups of graham cracker crumbs to 1/3 to 1/2 cup butter.

I will probably use 1.5 cups graham cracker crumbs to 1/2 cup of butter the next time I make these.

The filling was the same in all 4 recipes:
2 cups of coconut and 1 can of condensed milk

The icing recipes varied.

I used the icing from this recipe
1 cup icing sugar, 2 tbsp maraschino cherry juice and 1/4 cup butter.

Yes! I tried a little tonight.

I had bought some in Dec 2020, and that was when I first became aware of Pink Ladies / Pink Angels/ Pink Sin. They taste like a relative of the Nanaimo Bar. They don’t contain nuts, only coconut and cherry juice in some recipes, so they’re a little safer to bring to parties than Nanaimo Bars (which contain almonds along with graham crumbs and coconut in the base), plus they’re cute.

The bakery that sold me my first squares went out of business in the summer of 2022.

I found out about Sunderland Pink Slice tonight.
