I love anything almond, and would like to bake them, but I’m not doing much baking this season, so I was wondering: could I do the batter in a food processor, using cold ingredients, form the batter into cylinders and chill them, then slice and bake them? That’s how I make my pistachio shortbread recipe.
I’m sure that would work just fine. I’ve often made sablé dough in the food processor. I don’t think you’d even need cold ingredients, but if that works for you in similar recipes, go for it. The dough tends to be soft when made, but it will firm up when chilled like others.
