Hi, everyone. This is my first post in the cooking discussions and I have a weird question for you. I am trying to recreate a cookie that I had at a coffee shop: a not-sweet chocolate cookie with a peanut butter center. Imagine a large thumbprint cookie. Do you have recommendations for a moist, plain chocolate cookie (with espresso is even better), something not sweet and durable enough to withstand an indentation and a giant blob of peanut butter on top? Ideally something you have tried yourself and can vouch for. Thank you.
I have made thumbprint cookies. I’m guessing you could start out with a basic thumbprint cookie recipe, reduce the sugar, add cocoa powder and bake. When they come out of the oven, allow them to cool a little and add a dollop of peanut butter, then refrigerate them.
I’ve also made a frozen chocolate peanut butter roll candy
I don’t have a specific recipe for what you are looking for, but it sounds like it would be fun to experiment until you came up with a creation you like.

the usual pb chocolate thumbprint is the other way around , with a pb cookie with a Hershey’s kiss in the thumbprint.
