The jalapeno orange pork tenderloin was a winner here. Marinated 8 hours. Very mildly seasoned - the jalapeno tamed considerably in the orange sauce and roasting. Served with rice.

And now I’m sipping on peppermint tea. Avoiding snacks.
Aiming to use this for meals during the coming week: a vegetarian lasagna. Layers of homemade tomato sauce bulked up with green lentils, grilled aubergine, a mixture of tofu and ricotta mashed in a bowl and seasoned with salt and pepper, baby spinach leaves, dry pasta sheets and grated cheddar sprinkled over the top.
Have made the recipe below a couple of times recently, using store-bought “bone broth” (ugh I hate that name) instead of veggie broth, for a bit of extra protein. Super easy to make and tastes much more decadent than it actually is. The cheese and a bit of butter are really the only remotely “unhealthy” things in there and both can easily be reduced; butter, just replace with more olive oil; and the cheese, while good, is definitely not the star of the dish texturally and you could use probably only 1/4 as much pecorino or similar sharper cheese and still get plenty of flavor. Recommend serving with a salad and some form of bread. (And a small glass of wine is pretty healthy too, right???)

we eat anything we like, and everything in moderation.
I liked the “Sausage and Cabbage” dish. I’ll substitute brats in for the sausage, but I imagine that should work.
