I’ve been reading a lot about it lately and am interested in doing some cooking. Anybody familiar with it or have any tips?
I lived with a housemate from Georgia but she didn’t do much cooking so I can’t say much about that. But your post made me curious and I came across this website which seems really comprehensive and interesting:

Yes, I was looking at some sites and the cuisine is quite interesting. Different ingredients like " Marigold" for example. What piqued my interest was a new Georgian restaurant that opened near where my mother live and where I grew up-

I thought some of the mushroom dishes looked nice because I like mushrooms and also the eggs with garlic.

I make lobio satsivi, green beans with walnuts, a few times a year.

I have been watching alot of you tube . Cooks from the Caucuses. And from Georgian republic , and Bulgaria.

and Beef Kharcho, using 2 online recipes as inspiration.
I also served basmati rice on the side.

I like the Please to the Table cookbook. It’s not strictly Georgian; it’s more a survey of the foods of the republics of the FSU. I love the khachapuri recipe, which is a different style than the adjaruli (looks like a boat) posted here.
