I don’t think there is anything I eat only because it would be good for me.
I eat what I like.
I will eat what I don’t like if someone invited me and prepared it, without knowing I don’t like it.
I happen to like kale. Has to have had the frost going over it.
Then mashed with potatoes and rookwarst (smoked sausage) to the side. And jus.
And a little vinegar
Pretty much the traditional Dutch way of eating it, although some people will add a bit of mustard as well.

I don’t think there’s anything I eat specifically for some derived benefit, outside of just filling my belly/calories, and eating things I think are tasty.
My wife does eat a tablespoon of chia seeds sprinkled into her morning yogurt, I think purposefully for the fiber content. Not to mention a decent protein/glycoprotein boost.
My second daughter has wavy, verging-on-curly hair. She used to buy a product called “CurlCare” but now boils ands strains flax seeds to get a product she claims works even better, cheaper, and no chems. Not quite what you’re after, though.
I eat oatmeal mixed with oat groats every morning because it is good for me, they say. The ONLY way I will come near kale is if it is dino kale, well massaged, mixed with romaine kettuce in a lightly dressed Caesar type salad. I will only eat cauliflower, because it is good for me, raw as a crudité. I like the ice cream comment.
