The original poster didn’t specify that they were solely looking for fruitcentric cookbooks focusing on sweet dishes.
Indeed, they did not. I was simply describing the content, and sharing my opinion of the book.
This is a great resource, but not comprehensive by any means, yet well done with good recipes. Available used on Amazon, probably other sites.
Also, a lot of general, encyclopedic type cookbooks do a fair job of covering fruits. I’m thinking JOC and The New Basics. Not sure about Bittman’s HTCE. As well, dessert and pie cookbooks cover a lot of fruit dessert territory. I’m thinking Pie and Pastry Bible. I can recommend Janie Hibler’s Berry Book too. She’s a good recipe writer with solid outcomes.
I’ve heard nothing but excellent things about Chez Panisse Fruits, though I haven’t perused it even. Lots of used copies out there, and will probably add it to the collection soon.
The Fruit Tart Cookbook by Pamela Azquith is an old favorite of mine.
