Cleaned out the freezer and found a big bag of chestnuts I froze a couple of months ago. Any ideas of how to use them up ? Preferably savory ?
Use them in stuffing for turkey. A bit late for TG, but in time for Christmas!
Tonight’s dinner is a chestnut and fennel pilaf. I use vacuum packed ones.
Probably a dollop of garlicky yoghurt alongside for a bit of moistness.
I’ve made:
Pureed: soup/spread (either with chocolate or mushrooms)
In small pieces: in mince (sausage rolls)/dumplings/baking/risotto/pasta
Whole: with sauteed Brussels sprouts and Speck
But I usually snack on them straight up. I remember eating chestnut cheesecake on Madeira (where there’s a chestnut gastronomy). But unfortunately for me most of the products are sweets.
So a rice based pilaf ? Sounds yum

Actually, we used to do something similar on Christmas Day, to go alongside the turkey. But, instead, we now do a chestnut & mushroom stuffing. And the sprouts now come plain.
