Kimchi fried rice, natto with rice and an egg, oyakodonburi, plain rice with butter and soy sauce, Lao yellow rice and duck (or chicken), rice pudding, risotto. I’d be happy with rice for every meal.
Why? Didn’t they get a new owner a few years ago? I noticed that since then there has been quite an upgrade to the backyard.
There are so many varieties of biryanis from India that there isn’t really a standard version. What I noticed is that the sloppy restaurants renditions sometimes just have a lot of heat and not a lot of nuances. The better renditions are always very measured in their use of spices, whether the dish ends up hot or not. And I haven’t even eaten the ‘proper’ ones in India that takes forever to make.
I can only answer ‘What’s your favorite version of every rice dish?’…
Ok.
You go first …
Years ago I lived in a place where there was no proper fried rice near home. Sometimes I got the fried rice craving and I had to make do with the ones from a shop next to the train station. That fried rice was terrible. Its dark brown, with the flavors from the soy sauce for the most part. I wouldn’t call that fried rice really.
Of course, sometimes nice joints (e.g. Lung King Heen in Hong Kong) will cook brown fried rice, but of course they know what they are doing.
“Upgrade” is open to interpretation.
According to Google. Florence Fang purchased the property in 2017 and proceeded to add even more modifications. We noticed a huge NOEL sign last year during the holidays.
Neighbors sued, lawsuits settled in 2019.
“Upgrade” to me as a driver who passes by on 280 and admire their latest modifications. Lol
I make egg fried rice religiously. +1
Fried rice lovers might want to pick up a jar of olive vegetable if they don’t already. I stir a little into cooked rice, or add it to the pan when making fried rice, and it’s also good with stir-fried green beans. It’s made from Chinese olives, and it’s oily but not very salty with lots of umami. Comes in a purple-labeled jar:
This is what it looks like out of the jar, including a whole olive at about the 1:00 position.
Cheating, I suppose, but a friend sent me a few packets of Rice River seasoned rice blends. So far I have only had the Savory Mushroom blend, which is utterly superb. I know that the leftovers only fit into a quart container by pressing on them but don’t recall if I had used one or two cups prior to filling the container. Either way, each packet makes a very generous amount.
Most of the Rice River packets feature combinations of rice varieties plus other grains/legumes. The website contains a number of recipes. https://www.chieftainwildrice.com/products/category/wild-rice/
This avowed rice agnostic may just have met her match. The rice from Jenny’s shrimp truck is soaked in delicious, garlicky chili butter that the two scoops of plain white soak up at least 1/4 inch in.
I ATE ALL THE RICE. Both scoops. This is unheard of. Not sure I’m a convert yet (I still don’t care much for plain steamed white), but I’m likely to hit the truck again before we leave and eat ALL the rice again
Come to the Dark Side; we have garlic butter soaked white rice!
Question: is my white sushi rice that has been in an open bag since 2020 likely okay? Or will it be stale? I refrigerate brown rice once I open the bag, and haven’t had issues with other white rice left unrefrigerated, but I haven’t had an open bag open for 4 years before.
Give it a sniff. If it doesn’t smell rancid, you’re probably ok.
Okay, thanks!
White rice has a very long storage life. The oils in rice are in the bran, but since white rice no longer has the bran, there’s not much to go rancid. It won’t be as good as new crop, but if you eat so little rice that a bag lasts you 4 years, you probably won’t notice the difference in quality.
Oh, I’ve been through many packages of other white rice, mostly Arborio, Jasmine , Basmati and an Italian long grain, over the past 4 years.
I bought the sushi rice while locked down, attempted sushi rolls and a California Roll Rice Salad, and then have been ignoring that open bag since then.
This looks good. I will let you guys know if it becomes a favourite.
Pilafs are one of my favourite rice dishes.

Maqluba, too.
