There’s obviously an audience for it beyond the cali vegan hippies and instagram obsessed millenials in sundrenched cafes… and as a sandwich shop owner it would be a fantastic profit margin maker, the basic ingredients aren’t costly and are likely used in other offerings as well.
I think a lot of people who “want to eat healthy” yet don’t want something that “tastes healthy” would be into it- i find most offerings in the genre are either too sparse and “healthy” or beautiful yet lacking in substance/flavor.
I think i’m just on the other side of what they define as the millennial age range- close enough i “get it” and yet old enough to refuse the label!
