falafel mix

I was using TJ falafel mix for the occasional DIY.
No longer available.
Anyone know who made theirs?
Or have a substitute.
Or should I get a bag of chickpea flour and roll my own?

It’s surprisingly easy to make falafel from scratch, but using dried chickpeas that have been soaked overnight (not cooked chickpeas!). This recipe is pretty similar to the one I use - with chickpea flour instead of all-purpose - but i don’t think I have ever seen a recipe using just chickpea flour, I think it’s too finely ground.

Make it home made. Do not buy Mary Jane’s Farm Falafel Mix. God awful.

when we used to get them as teens on Atlantic Ave, I think they were made with favas and not chicks.
I will try one of those recipes too, or perhaps a mix of both.
Then waffle them up.

I first came across waffled falafel in a cookbook called “Will It Waffle?” (spoiler alert: yes…). I haven’t ever seen the exact recipe online but the one I shared looks pretty darn close. A waffle iron is also superb for stuffing and latkes - anything you need to crisp up without deep-frying…

anyone ever added black bean flour to the garbanzo and fava bean flours?

I buy my falafel mix at the kosher butcher. It works perfectly, whatever the brand.

I have added Besan (Garbanzo Flour) to Falafel Farce because it was not holding together. It made them claggy/heavy, I would not recommend it.
