Egg shortage: January 2025

I recall a quick segue OT in the Grocery Outlet thread re the egg shortage/price increases due to the bird flu epidemic. Most places are either out of stock or are limiting # of cartons.

Just FYI if you have had no luck getting ahold of a large number of eggs and are desperate - I have had no trouble getting Safeway delivery on two (that’s the max, and no substitutes allowed) of the 18-egg carton sizes, so a total 3 dozen eggs. I usually order delivery 3-4x monthly.

Price as of today Jan 18th was $25.98 total, or $12.99 each 18-egg carton. Minor discount if you’re a Safeway Club Card holder.

This thread from Jan 2023 has egg price issues as well.

This is what I posted in December about the price of 12 “special” eggs through my CSA in Northern California increasing from $7.99 to $10.99. No increases I am aware of since then.

With the price of eggs what they are, I’m looking for suggestions for substitutes. Mainly as coatings for egg wash (part of a breading station or coating bread).

I’ve got about a dozen in stock, but won’t be able to purchase any until they come down in price or are on sale/clearance.

Can you use egg beaters for an egg wash?? Do you dilute it??

You can use aquafaba as an egg wash.

Yes, do not dilute.

Just whisk thoroughly to maintain proper consistency so that it spreads evenly to create the desired sheen from traditional egg washes.

The only issue I had was very few X Lg eggs in my local Market Basket north of Boston. They only had Land O’ Lakes eggs in X Lg…price was $3.99/dozen. Large eggs were prevalent, and prices ranged from $2.99 to $4.69, IIRC.

@Desert-Dan I sometimes use mayo.

I stopped into the grocery store for a few items today and they were limiting eggs to 1 carton per customer. Prices started at $8 and went up for organic/fancy. Fortunately I stocked up last week in advance of a brunch I’m hosting tomorrow - which features deviled eggs!

Thanks… yes I have plenty of mayo in stock.

So you just brush on a light coating, the same as an egg wash??

Same here.

You can use mayo in place of an egg wash when breading. I use it as often as I use egg.

Whoops. I see I’m repeating at least 2 other posters.

I use the mayo as it is, or add some herbs and spices.

Yes.

And now insurance companies aren’t covering egg producers for avian flu.

I went to Walmart this morning and priced eggs…

$8.02 for 18 Pack

I’m going to hold off purchasing them for a while. I counted and still have 14 left.

I go to the local Shoprite primarily for eggs (jumbo) and graham crackers. I get 2 dozen eggs each time I go. Last time (2 or 3 weeks ago) they were $6.99 a dozen, up from the $5.99 I’d regularly been getting them out. I stlll had a dozen left this week, but hearing the noises, and being on that side of town anyway, figured I’d get some more. $7.99 a dozen now. I haven’t had to buy regular (large) eggs since the end of 2024, but finished a carton this weekend baking, so will soon. Guess l’ll start pricing.

I feel that I should stock up on my usual jumbo brown eggs, still at an affordable $4.95/dozen. But I have nearly two dozen in the fridge, and the Google says eggs have a refrigerator life of 3-5 weeks. I’m not sure I could go through three dozen in that time frame.

The best prices I’m fiding locally in Asheville are a dozen store-branded free range and cage free eggs at Ingles (both just shy of $4) and cage-free eggs at Trader Joes (approximately the same but often out of stock).

Count yourself lucky. A couple of days ago, at my local Trader Joe’s.
